Blueberry Muffin Recipe
| Ingredients | Amount |
| Stevia Powder | 1 tbs |
| Butter, unsalted | 2 tbs. |
| White Flour | 3/4 Cup |
| Whole Grain Flour | 3/4 Cup |
| Salt | Pinch |
| Eggs | 1 |
| Baking Powder | 2 tsp. |
| Canola oil | 1 tbs |
| Blueberries | 1 Cups |
| Fat Free Milk | 1/2 Cups |
Baking Instructions - Diabetic Muffin Recipes
- Pre-heat oven to 400 degrees Fahrenheit and use some fat free cooking spray to grease a 12 muffin baking pan.
- Beat egg white and oil together. Combine with milk and melted butter. Set aside.
- Combine dry mix ingredients: Flour, baking powder, stevia powder, salt.
- Combine both mixes, then gently mix in blueberries. Do not over mix. Scoop batter evenly into the muffin pan.
- Bake until tops are golden brown, approximately 20 minutes. One serving is one muffin.
