Blueberry Pancakes

These are really good and oh so easy! 1 box of Hungry Jack Complete Mix (just follow the directions on the back of the box for how much mix and how much water.) fresh blueberries sugar free syrup Heat a skillet and spray with non-stick cooking spray. (I spray my pan before I cook each pancake.) Pour some batter in the skillet, then sprinkle a few blueberries and cook the pancake on both sides until done. Serve with your choice of syrup. We use Walmart's brand sugar free, and it really has a great taste. You don't even think of it as being sugar free.

Apple Spiced Glazed Donuts

1 7.5 oz. can refrigerator biscuits 1 cup Splenda sweetener 1/2 tsp. pumpkin pie spice 2 tablespoons apple juice canola oil for frying Remove the biscuits from the can and place onto a cutting board. Using a 1/2 inch biscuit cutter or the cap from a water bottle, remove the center from each biscuit. Place both the donut and the donut holes onto a cookie sheet and allow them to rest and come to room temp., about 15 minutes. In a bowl, combine sweetener, pumpkin pie spice and apple juice. Whisk together until smooth and well combined. Set aside. Fry the donuts until golden brown, about 1 minute per side. Remove from oil and place on a cookie sheet lined with a paper towel. Repeat with remaining donuts and donut holes. Dip the top of the donut into the prepared glaze and place on a tray. Let the glaze set about 5 minutes.

Funnel Cake Mix in a Jar

1 cup all purpose flour 1 tsp. baking powder 1/4 tsp. salt 1/2 tsp. cinnamon Layer ingredients in a jar. Attach a tag with Directions: Combine the following: 1 egg 3/4 cup fat free milk 1 cup mix Blend well. Pour some batter into a funnel (pour batter into hot oil from funnel bottom) Fry 1 minute on each side until golden brown. Top with Splenda sweetener.

Easy Cinnamon Rolls

2 cans crescent rolls 1 stick softened butter 1/4 cup sugar 2 tsp. Splenda sweetener 1 tsp. cinnamon 1 cup Splenda sweetener 2 tablespoons fat free milk Unroll crescent rolls Make 4 rectangles from dough. Spread with butter. Combine cinnamon and sweetener and sprinkle over rolls. Roll each rectangle into a long roll. Cut each roll into 5 slices. Place slices cut side down on a lightly greased pan. Bake 20-25 minutes. Drizzle with mixture of Splenda & milk.

Apple Cinnamon Oatmeal Bread

1/4 cup butter, softened 2 cupd Splenda sweetener 1 cup chunky applesauce 1 1/2 tsp. cinnamon 2 packs of instant apple cinnamon oatmeal 2 eggs 1 tsp. baking soda 1 1/2 cups flour Preheat oven to 350. Lightly spray a loaf pan with non-stick cooking spray. In a large bowl, cream together the butter and sweetener. Mix in applesauce, cinnamon and oatmeal. Stir in the eggs, then add baking soda and flour. Pour batter into pan and bake for 1 hour or until toothpick inserted comes out clean.

One Bowl Chocolate Chip Banana Bread



3 large bananas, well mashed 1 egg 1 stick of butter, melted 1 1/2 cups of flour 1 1/2 cups of Splenda sweetener 1 tsp. salt 1 tsp. vanilla 1 tsp. baking soda 1 cup finely chopped pecans 1/2 cup mini chocolate chips Mix all ingredients in a large mixing bowl, start with dry ingredients first, then add wet ingredients. Pour into a greased loaf pan and bake at 350 for about 1 hour or until knife inserted in the middle comes out clean.




Fabulous Fudge (reduced sugar)

2 cups Splenda sweetener 1-5 oz. can evaporated milk 2 tablespoons butter 1/4 tsp. salt 1 tsp. vanilla 1 pkg. milk chocolate chips half bag of mini marshmallows 1 cup chopped pecans In a large saucepan, mix sweetener, milk, salt and butter together until boiling, stirring constantly. Boil for 5 minutes, then remove from heat and add vanilla, chocolate chips, marshmallows and pecans. Stir until well blended. Pour mixture in a lined with foil and sprayed with cooking spray 9" pan. Put in fridge until set, cut into chunks and store in the fridge. Stays fresh for at least 2 weeks, probably longer, but it usually doesn't last that long at my house.

Oatmeal Butterscotch Pecan Cookies

Hubby's favorite cookies!
1 1/4 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon ground cinnamon 1 cup (2 sticks) butter or margarine, softened 1 cup Splenda sweetener 1 cup Splenda brown sugar 2 large eggs 1 teaspoon vanilla extract 3 cups quick oats 1 pkg. Nestle butterscotch chips 1 cup chopped pecans Preheat oven to 350 degrees. Mix all ingredients in a large bowl. Spray a baking sheet with non-stick spray. Bake for 10 minutes. Remove from oven and let sit for about 5 minutes before removing from pan.
